Substitute and Imitation Cheeses
Substitute and imitation cheese are commonly called “analog” cheese. These cheeses typically use casein, a milk by-product and vegetable oil in place of milk solids. They offer functional advantages as well as cost savings.

Substitute cheese is nutritionally equivalent to the natural or process cheese for which it substitutes. Imitation cheese is similar to substitute except it is not nutritionally equivalent.

Schreiber Foods also offers an imitation cheese formula that features zero trans fats and lower sodium. Ask your Schreiber representative if this formula might be appropriate for your needs.
